Quick and Easy Salad Recipes: Radish Salad Recipes

A radish is a nutritious root vegetable. They are different types of radishes – daikon (white Japanese radish), green Chinese radish (that resembles daikon in its appearance), black Spanish radish, watermelon radish, and the most common red radish (that is either sold loose or in a bunch with leafs on top). Radishes are low in calories, and are a great source of vitamins (vitamin C, vitamin B-6…), minerals (iron, magnesium, copper, and calcium), dietary fiber, and anti-oxidants.
Radishes have a sweet taste though they can be a bit bitter as well. They can be eaten raw, used in sandwiches, pickled, steamed, sautéed, stir fried or used in salads. Below you will find a few radish salad recipes that are easy to make and don’t take up a lot of time. These make use of the red radish.
Sour Cream Radish Salad
Ingredients:
- Red radish
- Scallion or Chibolita onions
- Fresh dill
- Dried parsley flakes
- Sour Cream
- Salt
Step 1: Wash the red radish thoroughly if it is loose and cut the top and bottom of the radish a little bit. (If the red radish comes in a bunch, first remove the radish from the leafs by cutting with a knife or a pair of kitchen scissors where the radish is attached to the leafs). Then cut them any way you like – slices, cubes, quarters – and place into a salad bowl. For one person I’d take about 4 radishes if medium size, but it’s really about how much you want to eat.
Step 2: Take a few stalks of scallion or a stalk of Chibolita onions (which are similar to a scallion), thoroughly wash them, and cut into little pieces. Add to the salad bowl with the radish.
Step 3: Take some fresh dill, thoroughly wash it, cut it into little pieces, and add to the salad bowl.
Step 4: Add desired amount of salt to the salad bowl, sprinkle with dried parsley flakes, and add a few table spoons of sour cream and stir. Then you are ready to serve.
Radish Salad with Roasted Sesame Seeds in Olive Oil
Ingredients:
- Red radish
- Scallion or Chibolita onions
- Salt
- Fresh dill
- Dried parsley flakes
- Olive Oil
- Roasted Sesame Seeds
Step 1: Wash the red radish thoroughly if it is loose and cut the top and bottom of the radish a little bit. (If the red radish comes in a bunch, first remove the radish from the leafs by cutting with a knife or a pair of kitchen scissors where the radish is attached to the leafs). If you’d like you can even add sliced tomatoes and dried cranberries to the salad.
